Description

Traditional Polish potato salad. Great with hamburgers, cold cuts, or whatever else you are having.

Ingredients

5 yukon gold potatoes
3 carrots
1cfrozen peas (blanched and cooled)
3 dill pickles (chopped fine)
1⁄2 eggs (hard-boiled)
1Toil
1⁄2cmayonnaise
1⁄4csour cream
1Tmustard
1Tpickle juice

Instructions

Steam whole potatoes and carrots till fork tender. Let cool. Peel and chop fine (1/4" cubes).

In large bowl, combine potatoes, carrots, peas, pickles and egg whites (chopped). Toss with oil to coat. Add mayonnaise, sour cream, mustard, pickle juice and egg yokes. Mix until well combined. Add salt and pepper to taste.

Refrigerate till cool and flavors have combined.

Notes

For serving: reserve one or two hard-boiled eggs, slice and place on top decoratively. Sprinkle with paprika.
